Raw Living, Kate’s second raw recipe book was published by Grub Street in July 2007. With an extensive introductory section on integrating a raw diet easily and successfully into a busy lifestyle, and over 150 outstanding recipes, this book is a wonderful addition to the kitchen of all those interested in raw foods, from beginners to experts.

Recipes include Red Pepper Ketchup, Thai Pumpkin Soup, Courgette Chips, Coriander Wraps, Lebanese Cauliflower Crackers, Gorgeous Goji Pudding, Banana Creme Pie, and Chocolate Brownies.

Healthy eating is officially 'here'. It seems you can't move these days for nutritionists advising you what to eat, celebrities endorsing a new diet regime, governments issuing strategies, or the media supplying alarming statistics. We are becoming a nation of people who take our health seriously, who want to eat the right things, who want to be slim, fit and youthful. We are realising that our food quality has deteriorated considerably over the past fifty years, to the point where we can no longer get all the nutrients we need from our food. And there are so many more stresses to contend with, which deplete our reserves: environmentally in the form of pollution, chemicals in the home, and electromagnetic radiation; and socially, in the fast-paced, high pressured lives so many of us live these days. If we do not look after ourselves properly, inevitably we become prey to one of the numerous symptoms of ill-health that affect us all; from general fatigue and muddle-headedness, through to asthma, eczema and psoriasis, all the way to cancer, heart disease and diabetes.

But it can be very hard to bridge that gap between our good intentions and our day to day realities. You may have read half a dozen times now that you need to get lots of Essential Fatty Acids (EFAs) to help prevent depression, but you're still not really sure what to do with that bottle of flax oil at the back of your fridge. You've realised your children's diet is low in minerals, but how do you get them to eat their greens? You're ready to kick the Dairy Milk habit, but what are you going to replace it with? Or you may simply not have the time and energy to research thoroughly the new foods you should be eating to achieve vitality. That's where Raw Living steps in.

If you examine all the various nutritional theories and diet plans closely, all the advice has a lot in common. Jill says add a little ingredient X, Paul wants you to do add supplement Y, and for Caroline, cutting out Z is the key. But break it down and they are all saying the same things:

Eat more fruit and vegetables!

Drink more water!

Eat more healthy fats!

Take some extra vitamin and mineral supplements!

This is Raw Living in a nutshell. The basis of a raw food diet is raw fruit and vegetables, preferably organically and locally grown, and eaten seasonally. To that add liquids in the form of pure water and fresh juices; fats such as nuts, seeds, avocados and olives; sprouted grains and pulses; and superfoods like bee pollen and spirulina (a microalgae). You need to avoid meat, dairy, gluten, sugar, and all processed foods, but one of the joys of the raw food diet is that it is effective if you follow it at least 50 % of the time. So you could have a raw breakfast, a cooked lunch, and a salad and something cooked for tea, or eat raw all day and then have a cooked dinner. Chances are if you picked up this book, you are doing some of that already. See? Eating raw is easy, because it's intuitively what we want to do. You don't have to give up your favourite foods, but you will find over time that if you stick with it, your taste buds will change, and you will stop craving junk food and start craving superfood!

I don't want to tell you what to do; there are enough experts around to do that. What I do want to do is to open the door to a whole new world of raw food cuisine. Raw foods are a revelation. After well over a decade of eating raw, I am more excited about this food than ever. I am still constantly discovering new ingredients or coming across new combinations. If eat out at a raw friend's house, I am invariably delighted by the variety and individuality of their cuisine. Raw foods inspire us to fulfil our creative potential, both in the kitchen and out of it! Eating this way is a real pleasure: simple and easy to prepare, this food can be savoured and enjoyed however busy your day, and fuel you with energy to cope with life's demands. When you eat foods that are fresh, locally, seasonally and organically grown, you are tapping into the infinite life force of the earth, you are accessing divine energy, and it tastes good!

This collection of recipes consists of all the dishes that my family has particularly loved over the last few years. At the time I was creating them, I had three sons under the age of seven and little time or energy to spend slaving in the kitchen. I had to make sure the food was ready quickly; but I also had to make sure it was going to be eaten, and not left on the plate. So here they are; a unique collection of raw food recipes that will taste amazing, make you feel amazing, and still leave you with time to get out of the kitchen and on with your life.

I really loved writing this book. Going back over all the information made me realise all over again how exciting raw foods are. It is such an easy concept to take on board, and its effects are nothing short of revolutionary. I have been travelling on this path for many years now but it's human nature to take things for granted and forget how far we have come. These days I am in the blessed position where most of my friends and the people I surround myself with are rawfooders; it's not even something I think about anymore. Putting the information together for this book has helped me see it with fresh eyes. I am passionate about the implications of the raw food diet for our society. When everyone starts to honestly take responsibility for their own health, to take their lives back into their own hands and empower themselves with the true facts about human potentiality and vitality, what kind of a world will we be creating then? When everyone wakes up feeling as super-charged and enthusiastic about life as the average rawfooder, what amazing realities will we be able to manifest? One of my most dearly held maxims is to 'be the change you wish to see in the world.' This is my main motivating force for eating a raw food diet, and why I feel it is so important. Eating raw provides us with one of the most integral tools for living a life of joy and abundance, for being a positive inspiration to those around us, and to counteracting all the negative and awful things that happen in the world day after day. I believe the best way to make the world a better place is to be a force for good in every way you can, at every moment possible; I believe complaining, fighting and protesting just contributes more unhappiness to the overall global situation. After twenty years of thinking this way, I can see sure signs that humanity as a whole is beginning to see there is a bigger picture, and I am often overwhelmed by the massive shifts that could be made once this consensus becomes reality. Now we are at a time where this is truly possible, and by holding this book in your hands and accessing the information I have built up after years of study and experience, you have found a wonderful key for really making your life a shining example.
