*Please note: While we naturally make every effort to ensure that products arrive with you in the best condition, the cultured vegetable range often leak. We tape around the lid, protect the glass jar with bubble wrap and put this into a sealed bag. Any leaks do not affect the product in any way, the fermentaion builds pressure in the jar that forces some liquid out. Simply wipe off. We do not replace any products that have leaked (as there's nothing wrong with them!), or any other products in your order in the rare ocassion that liquid finds its way out of its sealed packaging and onto them.*
Cultured Probiotics are a family run business making raw live unpasteurized fermented vegetables, and they are delicious! They started the business because 4 years ago 2 of their sons were diagnosed with autism, and they used nutrition to heal them, and they found that fermented foods were one of the major keys to their recovery.
The recommended storage for all our ferments is refrigeration. This slows down the on-going fermentation and should last in the fridge for over 1 month (between 3 - 6 months or more if stored correctly) for freshly unpacked sauerkrauts and 2 weeks for the antipasti’s. Once opened, please consume within 2 weeks. The sauerkraut ferments should last a while if you keep the vegetables submerged in the kraut liquid. If you have no liquid in the jar then make up a solution of salt and mineral water and add it to the ferment just so that it covers the vegetables. The saline solution must be according to taste so as salty or not salty as you like. Sauerkrauts that are past the lactic acid developement stage and are no longer fermenting will perish alot quicker than newly unpacked krauts that are still fermenting. These require submerging in their liquid at all times till consumed, we advise you to consume in 3-7 days once opened.
We are a family run business. Two of our children were diagnosed with autism. Unable to accept this we began looking for answers and spent the last four years researching and investigating. Whilst recovering from the shock and trying to pick up the pieces we got wind that an acquaintance (who has now become a fellow soldier on the front line) had just found out that her son had autism. Her hopes and aspirations for her child were shattered just like ours and she too began to mourn for the loss of her son. Like us she did not accept what was now before her and in her quest for answers came across the SCD (Specific Carbohydrate Diet) by Ellaine Gottschall and shared with us the many benefits, which we promptly recognised and implemented. After a year we tweaked the diet to suit our individual needs as the exclusion of most sugars seemed beneficial for our children in their development. I can safely say that this was a major turning point after a couple of years of searching. The diet led us through different avenues of information and opened up the world of nutrition and probiotics. This inevitably led us to ‘’The Gut and Psychology Syndrome’’ by Dr Natasha Campbell McBride and further on to a book by Sally Fallon Morell ‘’Nourishing Traditions’’. This was the beginning of cultured foods in our house and subsequently the development of the business in the last year. Our lessons from all that we have experienced are that a healthy life is in the lifestyle. Cultured vegetables and fermented foods are a part of a successful migration to healthy living and should be included in one's diet. We believe this forms a vital key to survival in a now hostile environment that seems intent on keeping us sick or eventually killing us through processed foods and chemicals there in.
The cultured vegetables we produce are condiments and accompany many meals, although we like to encourage our customers to do and eat as they please. There are no rules and everything is based on preference. The only thing we advise is for those that frequently go back and help themselves to a portion for their meals then please where ever possible try to use a clean utensil to avoid contaminating the ferment, e.g. no mayo or tomato sauce residuals in the jars. This reduces the development of any unwanted fungal growths in your ferments and keeps the food appetising and appealing.
We use fermenting crocks and wooden barrels for the whole process and try to leave them to ferment over 2 weeks at a minimum for the sauerkrauts and 1 week minimum for the antipasti’s. The vegetables are shredded and mostly prepared by machine. We then flavour and salt followed by pounding using a wooden stomper to create the juices necessary to ferment the vegies in. No extra ingredients are added and everything is completely raw and unpasteurized.
It is with regret that we are unable to share with you more information about this product. Various EU legislation forbids us (and all other food business operators) from claiming that these products can offer any possible health benefits. Raw Living cannot be held responsible for orders delayed or returned by customs. If a package is returned by customs we will be charged, and this cost, together with the original carriage cost and a 10% handling fee will be deducted from any refund requested.
