Marching Biscuits

Preparation time: 12 hrs pre-soaking, 10 mins to make, 18 hrs dehydrating
Equipment needed: dehydrator
Makes 50 biscuits

The Chia seed is another South American superfood we are lucky to have recently discovered. It's an amazing source of omega 3 fatty acids, as well as being rich in antioxidants,vitamins and minerals. It's very energising, and goes well in chocolate (doesn't everything?). You can grind them up and add them to breads and biscuits, or soak them and use them in puddings and smoothies. They're similar to flaxseeds, in that they swell up into a jelly when soaked.

The Aztecs ate them when they were marching into battle, and I definitely walk faster when I've been eating them. So march through the year, with these chocolate chia flax crackers.

Soak the chia and flax seeds together in the water for at least four hours, preferably overnight. When you are ready, stir all the other ingredients into the soaked seeds -this will take a few minutes of patience. When you're satisfied it's all fully mixed, spread them onto two dehydrating sheets. Dry for 12 hrs, then score into five by five (25 biscuits on each sheet), flip and dry for six hours more. The end result should be moist and irresistable. (Sometimes I cut a square of chocolate and sandwich it inside a folded in half biscuit, but don't tell anyone, it's so amazingly good I'm sure we'd get told off).
